Ingredients:
- 1 cup silken tofu
- 1/2 cup brewed espresso or strong coffee
- 1/4 cup cocoa powder
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- Pinch of salt
Instructions:
- Blend silken tofu, espresso, cocoa powder, maple syrup, vanilla extract, and salt until smooth.
- Pour the mixture into mini silicone molds or ice cube trays.
- Chill in the refrigerator for at least 2 hours, or until set.
- Pop out and enjoy your delicious mocha pudding bites!
