Ingredients:
- 1 cup mixed sprouts
- 1/2 cup barley
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 2 cloves garlic, minced
- 1 tsp cumin powder
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish (optional)
Instructions:
- Sauté onion and garlic in olive oil until soft.
- Add tomatoes, carrots, celery, sprouts, barley, cumin, paprika, salt, and pepper. Cook for 2 mins.
- Pour in vegetable broth. Simmer for 30-40 mins until barley is tender.
- Adjust seasoning if needed. Serve hot, garnished with cilantro.
